Its not Christmas yet, not even the time for Diwali. But you don't need it to be Christmas to bake a fruit cake or a simple dates walnut tea cake like this. All you need is some chopped dates and the urge to bake. Its like spring cleaning here, kinda... And we came across half a packet of dates. We ate, ate and we ate dates but they did not seem to end. So I chopped some up along with some chopped figs, some candied peels and now they sit soaking in rum. I still had half a cup and that made me browse for some easy dates cakes and thats when I landed up here. I loved its simplicity and I loved the use of just 1 tbsp butter. Low fat and perfect for the family. Its a perfect tea time cake and is a breeze to make.
Slice and serve!!!
** My notes:
** The cake can be stored for 5 days if wrapped in foil or stored in an airtight container.
** You can use a mixture of nuts.

Adapted from here ~*What U Need*~ Dates - 1/2 cup Butter - 1 tbsp Baking soda - 1/2 tsp Boiling water - 1/2 cup Brown sugar - 1/4 cup + 2 tbsp Egg - 1 All purpose flour - 1 cup Baking powder - 1 tsp Cinnamon, ginger - 1/4 tsp each Walnuts - 1/2 cup How I Made it: Chop the dates finely, place the dates in a bowl with the butter and baking soda. Pour over the boiling water and stir until the butter has melted. Set aside to cool. Preheat the oven to 180°C. Lightly grease your baking pan and dust with flour. Place the sugar and eggs in a large bowl and beat well to combine. Add the cooled date mixture, then sift in the flour, baking powder, spices and salt. Add the walnuts and stir together until thoroughly mixed. Pour the mixture into the prepared tin and level the top. Bake for 30-35 mins or till a skewer inserted in the centre comes out clean. Turn out onto a wire rack and leave to cool. |
