Mango Shortcake Cake ~ from me, to him!!!

Aaaannnnd the second bake of the promised cake mela is out and live... This is what I baked for the huss's birthday... A soft, moist and buttery vanilla sponge sandwiched with whipped cream and macerated mangoes... I had this in mind ever since I came across the Pioneer woman's strawberry shortcake cake. But could not get it done when the strawberries were in season. I had other ideas like the lemonade and then the strawberry curd and then again the gateau and many more and then it was end-of-season.

When I was thinking about the huss's birthday cake, the mango shortcake cake idea kept popping up and even before making it, I knew how it would look like and I knew that it would be perfect for the day... The huss is not a big fan of mangoes, in fact not of any fruits. You know that I am the opposite. Mangoes are my weakness and so the cake sounded just right (for me).

Its been 4 years since I met this guy and fell head over heels in love with him. And its been a roller-coaster ride since then. Life is not perfect, neither him nor me but life with him is contented and I would never ask for more... He has been everything I wanted being there whenever I needed him... Right from gifting me my prized collection of the Harry Potter series the very next day we got married to all the things he has done for me to all the decisions I have been taking. Hes always there supporting me if I am right and steering me the right way if I am wrong... I love him for what he is to me and I love him for everything.

~*What U Need*~
Adapted from The Pioneer Woman

All Purpose Flour / Maida - 1 1/2 cup
Cornflour - 1 tbsp
Icing Sugar - 1/2 cup
Butter - 1/4 cup
Egg - 1
Yogurt - 1/4 cup
Vanilla essence - 1/2 tsp
Baking Soda - 1/2 tsp

For Decorating & Filling:
Mango - 1 no
Whipped cream - 1 cup
Icing sugar - 2 tbsp

How I made it:
Preheat the oven to 180C, grease and flour your cake tin. Sieve flour, cornflour, baking soda and salt(if using) and set aside. Now cream together butter, sugar and vanilla till fluffy and light.

Add in the egg and beat till creamy followed by the yogurt. Add the sifted dry ingredients and fold gently. Transfer this to the prepared pan and smooth the top. Bake for 45 to 50 mins. Remove this from the oven and allow it to cool down completely.

While it is cooling, make the filling. Whip the cream and set in the fridge. Chop the mangoes, set aside a few chunks to decorate. Add 2 tbsp sugar to the remaining mangoes and mash with a fork. Set aside for 15 mins and then in the refrigerator till use.

Now take the cooled cake and slice it in half in the middle. Place one layer on a plate and spread half of the mango mixture over this. Cover it with whipped cream.

Now place another half of the cake on top of the cream and spoon the mango mixture again. Then cover the top with remaining whipped cream.

Place the whole cake in the fridge and serve cold.

The cake was good, in the sense too good and by the time I had sliced and served it, they were there for seconds. And so I could not click a decent pic of the slice. I am making this again and so will update the post with the pictures then.
