...Chocolate Mini Cakes for two. How romantic does that sound!!! It was our anniversary two days back and I baked this cake for that special day. At first I thought of making a Chocolate Malt Icecream Cake from Betty Crocker's site. The huss loves chocolate and icecream and so combining the both into a decadent cake sounded just right. And then I was browsing for a strawberry galette recipe to use up my strawberry over-haul, he had a peek, looked at that reddy-red colors and then strawberry galette it was!!! Try anything all he wanted was the galette...
Anything romantic calls for chocolate!!! Atleast for me. And I knew that I needed something rich chocolate-y and totally sweet for our day. And so the galette was postponed and so was the chocolate icecream cake. I was browsing for some easy recipes, not for an elaborate bake and decorating was definitely a no-no, when I came across these mini heart cakes from Hershey's. I loved the idea and was so hooked to it. I did not have the cookie cutter but the huss's wine glass came to the aid. I used the mouth to get the rounds. Another plus point is that the frosting can be made by hand (...strong hands). You need some strong whisking to be done but it turns up really smooth. Also the ingredients need not be brought to room temperature and so it needs no waiting time.
Its been 4 years and life could never have been more satisfied. This day, 4 years back, I got married to a total stranger. Today I can wholeheartedly say that "He is my man, my Mr.Perfect, my other half". And now with my little man to complete our family, I am one happy soul on the face of this planet. So here's to many more years of togetherness and happiness.

~*What U Need*~ All purpose flour - 3/4 cup Granulated sugar - 2 1/2 tbsp Light Brown sugar - 1/4 cup Hershey's Cocoa - 3 tbsp Baking soda - 1/4 tsp Salt - a pinch Water - 1/2 cup + 2 tbsp Vegetable Oil - 3 tbsp Vinegar - 1/2 tsp Vanilla extract - 1/2 tsp Chocolate Frosting Unsalted butter - 1 tbsp Powdered sugar - 2/3 cup Hershey's cocoa - 1 tbsp Milk - 2 to 3 tsps Vanilla extract - 1/8 tsp How I Made it: Heat oven to 350°F. Grease and flour 8-inch baking pan. I used my 8-inch springform pan. Stir together flour, granulated sugar, brown sugar, cocoa, baking soda and salt in medium bowl. Add water, oil, vinegar and vanilla; beat with whisk until smooth. Pour batter into prepared pan. Bake for 18-20 mins or until wooden pick inserted in center comes out clean. Cool for 10 minutes; remove from pan to wire rack. Cool completely. To make the frosting, sift powdered sugar and coco. Melt butter. Add cocoa-sugar mix to butter alternating with milk, whisk till smooth. Stir in vanilla. Whisk well. Using a cookie cutter, cut cake into 4 rounds. Spread frosting on top of two cakes, place remaining cakes and decorate as desired. |
