Its like this, you see. These days I prefer gifting homemade baked goodies whenever I visit friends or relatives. And when there are kids, I make cupcakes. I usually stick to my oreo chocolate chunk cupcakes or if I can get my hands on fresh strawberries, then strawberry cupcakes it is. There is something with the cupcakes that make kids love them. Might be because they are bite-sized or because that wrapper hides in something delicious. But tearing that wrapper and taking a mouthful of soft yummy cake is something that I enjoy even now.
A newly wed friend of ours had invited us over for lunch. Apart from the gift that I had chosen, I wanted to make her something special. She is s chocoholic(who is not) and she loves anything sweet. Taking note of these two crucial points, I settled for a chocolate cake adding some white chocolate chunks for more sweetness and nuts for crunchiness. I set about making the batter, loading them into my silicone mini loaf pans and then into the oven. In came the huss, demanding one loaf to be set aside for him. He never understands... But let me tell you, all that deep chocolate flavor wafting around will definitely make you want a bite.
I would say serve it with some strong black coffee and if it is freshly brewed it is all the more merrier... Pairs too good...
How I Made it:
Prepare the buttermilk by adding 1 tsp vinegar to 1/2 cup milk. Preheat oven to 160C. Grease and flour a loaf pan or a cake pan or two mini loaf pans. In a bowl, sift flour, cocoa, baking powder, salt and coffee.
Add the sugar and baking powder and mix well.
In another bowl, whisk the buttermilk, oil, egg and vanilla.
Add this to the dry ingredients and mix till smooth. Fold in the chocolate chunks and walnuts. Pour into the pan and bake for 30-35 mins. Check for doneness, remove and cool completely.
Slice and serve. Enjoy with a cup of coffee or warm milk.
