We seldom buy mutton at home and whenever we buy it, it is for the huss. I hate mutton, all thanks to a very bad first time experience. My mom makse the best chicken roast but mutton has never been her thing. The first time she cooked mutton it turned out like a piece of leather and that was the last time she took the risk. Things did change after marriage. My MIL cooks mutton perfectly. The entire family falls for her dhal curry and mutton roast and I am no exception. Gaining knowledge from her, I have started cooking mutton in my kitchen too, though not so frequently. This spicy mutton curry is my huss's favorite. Pair it with some soft phulkas or some hot ghee rice and lunch can never get any better.
Serve with chapathis or rotis.

~*What U Need*~ Mutton - 1/2 kg Onion - 1, large, chopped Tomatoes - 1, large, chopped Ginger garlic paste - 1/2 tbsp Oil, salt Cinnamon stick - 1" Cloves - 2 Cardamom - 2, crushed Bay leaf - 1 Coriander leaves - 2tbsp (for garnishing) For masala: Coconut - 1/4 cup, grated Fennel seeds - 1 tsp Onion - 1/2 cup, cubed Coriander powder - 1 tsp Red chilli powder - 1 tsp Garam masala - 1/2 tsp Turmeric powder - 1/4 tsp How I Made it: Heat 1/2 tsp oil in a pan, add the fennel seeds and when brown add the onions. Once the onions are fried, add the coconut and fry till toasted and brown. Next add the spice powders and roast for another 3-4 mins. Set aside, allow to cool and then blend to a smooth paste. Heat a pressure cooker with oil, add the cinnamon, cloves, cardamon and bayleaf and once fried add the onions and saute well till nice and golden. Add the ginger garlic paste and cook for 2 mins. Then add the tomatoes and cook till soft. Add the mutton pieces and cook for 5 mins. Add 1/2 cup of water, put the lid on and cook for 5-6 whistles Once the mutton is cooked, add the masala and mix well. Season with salt and allow to boil till oil separates. Garnish with coriander leaves and remove from flame. |
